Aam Ki Kadhi

Kadhi is an Indian dish composed of a gravy of chickpea flour, vegetables, pakora, and curds. It pairs well with rice and flatbreads. Aam ki kadhi is a seasonal kadhi variation that utilizes mangoes. It’s sweet, delicious, and provides a unique twist to the usual kadhi.

Ingredients

tbsp besan: 3

tsp chickpea flour: 1 1/2

inch ginger: 1/2

small mango: 1

salt to taste

tsp turmeric powder: 1/2

dry red chilies: 3-4

tsp cumin seeds: 1/2

tsp asafetida: 1/4

cups water: 4

tbsp oil for tempering: 2

tbsp oil: 1

tsp mustard seeds: 1/2

dry red chilies: 2

a sprig of curry leaves – tender

How To Make Aam Ki Kadhi

  1. Mash the mango into a puree and set aside.
  2. Mix curd with chickpea flour to form a batter and set aside.
  3. Heat oil in a pan. Splutter cumin seeds and add asafetida and dry red chilies. Stir for a minute.
  • Stir in chickpea batter with water, salt, turmeric powder and mashed mango.
  • Cook until the raw smell of turmeric fades and the mango is slightly softened.
  • Note: About 40-45 mins.

    1. Heat oil in a small kadai. Add dry red chilies, curry leaves, and mustard seeds
    2. Pour the tempering over kadhi.
    3. Serve and enjoy! 

    Trivia 

    There are yellow, orange, green, and red mangoes.
