Zucchini like many vegetables are not everyone’s favorite due to the taste unless you are in a serious body-building profession. However, your boring zucchini just got beautiful turn-around. If you prepare zucchini stuffed with soya, you will not stop making this tasty recipe for every special or non-special occasion. You can make this recipe even as a starter, be it in family dinner or your usual lunches. With its crispiness and spiciness, this recipe is surely going to be a hit!

Zucchini contains great amounts of fiber and lesser amounts of carbohydrates which take care of lessening diabetes. When it comes to protein, soya’s protein is considered to be a shoulder to shoulder with animal protein. Soya is even useful for lowering cholesterol levels.

Ingredients

green zucchini, boiled: 1

soya kernels, soaked: 100 g

garam masala: 1 tsp

ginger garlic paste: 1 tbsp

coriander powder: 1 tsp

green chili, finely chopped: 1

cumin powder: 1 tsp

oil: 2 tbsp

salt to taste

lime juice: 1 tsp

Finely chopped fresh coriander

How To Make Zucchini Stuffed with Soya

  • Soak the soya kernels in lukewarm water for an hour so that they turn soft.
  • Cut the zucchini in two halves and scoop out some of the inner parts.
  • Heat oil in a pan and sauté green chilies and ginger garlic paste in it.
  • Add the soya kernels to it, some coriander leaves, lime juice, and all the spices.
  • Stir-fry the mixture until it is cooked.
  • Fill the zucchini with the soya mixture and place them on a greased tray and bake for about 5 minutes.
  • Serve hot!
