Ingredients

oil: 1/2 tbsp

small fresh red or green chile, finely chopped: 1

garlic, finely chopped: 1

finely chopped fresh ginger: 1 tsp

chopped French beans: 2 tbsp

chopped red bell pepper: 2 tbsp

chopped carrots: 2 tbsp

chopped onions: 2 tbsp

chopped cabbage: 2 tbsp

chopped celery: 2 tbsp

green onions, white and green parts, chopped separately: 2

salt: 1/4 tsp

black pepper: 1/4 tsp

cups water: 2

soy sauce or to taste: 1/2 tbsp

cornstarch: 1 tsp

tamarind powder: 1 tsp

vinegar: 1 tsp

chopped cilantro leaves: 1 tbsp

How To Make Vegetarian Manchow Soup

  1. Heat oil in a pan and stir-fry the chopped fresh chilies, garlic and ginger for a minute. Add all the vegetables, white parts of green onions, saltand black pepper.
  2. Stir fry for 4 minutes till the veggies are well fried.
  3. Then add water and soy sauce to taste. Stir well and allow the soup to come to boil.
  4. Add a little water to the cornstarch to make a smooth paste.
  5. Add the cornstarch paste to the soup. Stir well and let the soup cook till it thickens.
  6. Add tamarind powder, vinegar and green parts of green onions.
  7. Cook a few minutes.
  8. Garnish with cilantro. Enjoy your spicy vegetarian manchow soup.
