Ingredients

vegetable oil: 3 tbsp

chopped onion: 1

cloves garlic- chopped: 2

curry powder: 2 tbsp

cinnamon: 1/2 tsp

ground ginger: 1/2 tsp

salt to taste: 1 tsp

black pepper: 1/2 tsp

chopped tomatoes: 2

water: 2/3 cup

pumpkin, chopped: 1 lb

potato, chopped: 1

carrot, chopped: 1

green banana, chopped: 1

Scotch bonnet pepper: 1

How To Make Pumpkin Stew

  1. Heat the oil in a large pan.
  2. Add the onion and stir.
  3. Add garlicand stir.
  4. Add the curry, cinnamon, ginger, salt, and black pepper then stir.
  5. Then add tomatoes and stir.
  6. Add water and scrap the bottom of the pan to put in all the flavors.
  7. Add the pumpkin, potato, carrot, green banana, and Scotch bonnet pepper.
  8. Increase the heat and bring to a boil.
  9. Cover it, and then reduce the heat. Let it simmer for little bit until the vegetables becomes very tender, stirring occasionally.
  10. Remove the Scotch bonnet pepper then serve.
