chickpeas: 1 can

avocado: 2

fresh lime juice: 1

corn: 1 cup

red onion: 2 tpsp minced

chopped cilantro leaves: 2 tpsp

Sea salt

Black pepper to taste

cayenne pepper: 1 pinch

sprouts, spinach leaves or lettuce

whole wheat wraps

How To Make Southwest Chickpea Avocado Smash Up

  1. Combine the chickpeas and avocados inside a medium bowl.
  2. Mash using the backside of a fork or a potato masher.
  3. Add corn, lime juice, red onion, salt, cilantro, pepper and cayenne pepper.
    1. Stir to combine.
  4. Taste and adjust the flavor as needed.
  5. Scoop filling onto a whole wheat tortilla.
  6. Top with lettuce, fresh sprouts, or spinach leaves
