slices of sprouted or whole grain bread: 2
avocado: 1

How To Make Simple Poached Egg Avocado Toast
- Take a large saucepan with water, add the vinegar and bring to boil over a high heat.
- Reduce the flame once the water boils.
- Crack in both eggs and cook for 2 1/2 minutes.
- Toast the bread.
- Smash avocado and season to taste with salt and pepper.
- Using a slotted spoon remove poached eggs to a paper towel to drain extra water.
- Set the avocado on the toast, then put a poached egg on top of each slice.
