Roasted Roma Tomatoes and Garlic

Roasted Roma tomatoes and garlic is a must try dish especially in the summer season. The slow roasting tomatoes significantly intensify the flavor of the vegetable, making them tasty and juicy.

You can either have them with your salad or a pizza. Otherwise, you can also have it as a complete main dish. They hardly take minutes to prepare, and once they are in the oven you can set an alarm, and forget about them for a couple of hours.

Ingredients

roma tomatoes: 1 dozen

extra virgin olive oil: 1 tbsp

rosemary, basil or thyme: 3 tbsp

Salt and pepper to taste

heads of garlic: 2

How To Make Roasted Roma Tomatoes and Garlic

  1. Heat your oven to 425 degrees.
  2. Spread a small quantity of olive oil in the bottom of a roasting pan.
  3. Slice the tomatoes in equal halves.
  4. Toss the tomatoes with a generous amount of olive oil. Sprinkle them with the herbs, salt and pepper.
  5. Place the tomatoes in the roasting pan and cook for 30 to 40 minutes. Keep checking after every 15 minutes to ensure that they don’t burn.
  6. Meanwhile, slice the garlic into pieces and coat olive oil on them. Wrap the garlic pieces in a foil. Toss the foil-wrapped garlic in the tomato pan and roast alongside the tomatoes. The garlic will take 40 to 60 minutes to cook. Make sure they are soft and juicy on the inside.
  7. Once they are properly cooked, take them out of the oven.
  8. Transfer them on a serving platter and enjoy!
