Roasted Goose with Prune and Apple Stuffing

Ingredients

fresh goose (giblets removed): 6 kg

pitted prunes that have been soaked in cranberry juice for 3-4 days: 18

apples (peeled, halved and cored): 8

Nutmeg: 2 tbsp

lemon slices: 6-8

Salt and pepper to taste

potatoes (quartered): 6

How To Make Roasted Goose with Prune and Apple Stuffing

  1. In a medium sized bowl, add the prunes and apples.
  2. Season them with salt and pepper to taste along with the nutmeg. Mix them well and stuff them in the goose.
  3. Add lemon slices in different parts of the stuffing.
  4. Cover the goose with a foil and place in a baking dish.
  5. Roast the goose at 325 F in the oven for 2-3 hours.
  6. Remove the foil and baste with the drippings.
  7. Continue roasting for a few more minutes until it is golden brown and very tender.
  8. Add the potatoes to the bottom of the baking dish 1 hour after the goose has been kept in the oven.
  9. Lightly season the potatoes with salt and pepper once the baking dish is removed.
  10. Serve and enjoy with French bread.
