water: 3 cups
turmeric powder: ½ tsp
Kashmiri red chili powder: ½ tsp
salt to taste
medium sized potatoes – boiled and peeled: 4
thick poha – washed: 4 tbsp or ¼ cup
turmeric powder: ½ tsp

cumin powder: ¼ tsp
chat masala: ½ tsp
oil for roasting
green chutney: 3 tsp
tamarind chutney: 3 tsp
salt to taste
generous pinch Kashmiri red chili powder: 1
cumin powder: 1 pinch
chat masala: 1 pinch
onion – finely chopped: ¼
tomato – finely chopped: ¼
sev, or as required: 1 cup
a few coriander leaves – finely chopped
a few fried peanuts
How To Make Ragda Patties
- Pressure cook soaked white peas with turmeric, chili powder, water, and salt for 4 whistles.
- Mash the peas.
- Set aside.
Prepare pattice.
- Mash boiled potatoes.
- Add chat masala, turmeric, thick poha, chili powder, cumin powder, and salt.
- Mix thoroughly.
- Shallow fry to golden brown and crisp.
- Place the pattice on a plate and pour over the ragada.
- Top with green chutney and tamarind chutney.
- Sprinkle with salt, chili powder, cumin powder, and chat masala.
- Top with onions, tomato, sev and coriander leaves.
