Ingredients

fistful of mint leaves: 1

fistful of coriander leaves: 1

garlic cloves: 3

ginger: 1 in

green chilies: 3

onion: 1/4

fresh coconut – desiccated: 2 tbsp

Other Ingredients

ghee: 1-2 tbsp

cumin: 1 tsp

black pepper: ½ tsp

bay leaf: 1

cloves: 6

star anise: 2

cinnamon stick: 1 inch

cashews - cut in half: 10

onion - thinly sliced: 1/4

tomato - finely chopped: 1

potato - cubed: 1/2

beans - chopped: 5

cauliflower florets: 10

peas: 1/4 cup

carrot - chopped: 1

basmati rice – soaked 20 minutes: 1 cup

water: 2 cups

salt to taste

How To Make Pudina Pulao

Pudina Masala Paste Recipe

  • Combine pudina and coriander leaves in a small blender.
    1. Add garlic, ginger and green chilli.
    2. Add a few slices of coconuts and onions.
    3. Add water and blend to smooth paste.

Pressure Cooking Pulao Recipe

  • Heat ghee in a cooker.
    1. add cumin seeds and remaining spices.
    2. Sauté them in medium temperature until they turn aromatic.
  • Add cashews and sauté until they turn golden brown.
  • Add sliced onions and sauté some more.
  • Add chopped tomatoes and sauté to the point that they turn mushy.
  • Add vegetables.
  • Add the masala paste and sauté.
  • Add soaked basmati rice.
    1. Sauté the rice without breaking the grains.
    2. Add 2 cups of water and salt to taste.
    3. Mix thoroughly and pressure cook for 2 whistles at a medium temperature.
  • Serve hot and enjoy!
