Potato Curry

In India this dish is commonly known as aloo gobi. It started out as a Punjabi dish but it now very popular and is a favorite across Pakistan and India.In truth, this is probably the most popular and basic vegetable curry dish you’ll get anywhere in India.It is filling and not expensive to make, and coincidentally, it is also a vegan recipe. You definitely need to have it in your repertoire.

Ingredients

vegetable oil: 2 tbsp

large onion – finely chopped: 1

garlic cloves--finely chopped: 3

large piece ginger, grated: 1

curry powder, or to taste: 1 tsp

ground cumin: 1 tsp

ground turmeric: 1/2 tsp

Sugar: 1/2 tsp

canned chopped tomatoes: 1 cup

head cauliflower, cut into florets: 1

potatoes, cut into chunks: 2

green chilli, split: 1

lemon, squeezed for juice: 1

To serve: handful cilantro leaves, roughly chopped

To serve: natural yogurt and naan bread

How To Make Potato Curry

  1. In a large saucepan, heat vegetable oil. Cook onions for about 10 minutes or until tender.
  2. Add garlic, ginger, curry powder, cumin, and turmeric. Cook everything for 2 minutes more.
  3. Stir in the sugar and tomatoes.
  4. Add cauliflower, potatoes, green chilli, and seasoning to taste. Place the lid on the pan and cook for 30 minutes, occasionally stirring, until the vegetables become tender. (Note: If needed, sprinkle with little water but keep in mind that this is a dry curry dish.)
  5. Once the vegetables are properly cooked, you can take out the chilli from the mixture if you like. Now, stir in the squeezed lemon juice and then scatter over with cilantro.
  6. Serve with natural yogurt and any Indian bread you like.
