Ingredients

tablespoon olive oil: 1

mushrooms: 600 g

tablespoons unsalted butter: 3

freshly minced garlic cloves: 3

finely diced small onion: 1

finely minced spinach: 2

tablespoons flour: 3

cups low fat milk: 1 1/2

cups chicken broth: 3

cup uncooked orzo: 1 1/2

tablespoon salt: 1/2

Black pepper to taste

salt to taste

parmesan cheese (for garnishing)

a small bunch of finely chopped parsley

How To Make Mushroom Orzo

  1. Medium heat the olive oil in a large non-stick pan.
  2. As the oil is heated, add the mushrooms. Cook until softened, for 2 to 3 minutes. Remove the pan from the stove and set aside.
  3. Lower the heat and melt the butter in the pan. Add garlic and onions. Cook until the onions become golden, for 3 to 4 minutes.
  4. Increase the heat to medium-high. Add the orzo, salt and pepper. Stir properly and put the lid on. Bring it to a simmer. Leave it to cook for 8 to 10 minutes, until the orzo turns firm and gooey.
  5. Once orzo is cooked, remove the pan from the stove. Add in the parmesan cheese, spinach and cooked mushrooms.
  6. Taste to see if more salt and pepper is required.
  7. Garnish it with the cheese and parsley.
  8. Serve the delicious orzo immediately and enjoy!
