Mushroom biryani is a fun take on traditional biryani. Biriyani is typically a spicy and tangy rice popular in India, Pakistan, Bangladesh, and Afghanistan. The usual biryani seasoning  calls for spices, rice, vegetales, and various types of meat, but this recipe calls for mushroom instead of meat.

Mushroom Biryani Recipe tastes best when it is hot. Store it in a casserole to keep it warm for hours together.

Ingredients

cup basmati rice: 1

fresh button mushrooms – chopped into big or cut into halves: 200 g

medium onions--sliced: 2

green chillies - slit: 2

tsp ginger garlic paste: 1

tomato: 1

tbsp curd: 1

handful coriander leaves: 1

handful mint leaves: 1

tbsp lemon juice: 1

salt as needed

Spice powder

tsp chilli powder: 1/2

tsp coriander powder: 2

tsp biryani masala: 2

tbsp oil: 2

cloves: 2

cardamom: 1

Cinnamon -small piece

How To Make Mushroom Biryani

  1. Wash and soak rice for 15 minutes.
  2. Drain the water.
  3. Clean mushrooms and cut into big pieces.
  4. Heat a teaspoon of ghee/butter in a pan, sauté soaked rice and set aside.

Note: This will make the biryani more flavorful.

  1. Heat 2 tbsp oil and roast cinnamon, cloves, and cardamom until aromatic. Follow up with onions and sauté until golden brown.
  2. Stir in chillies and ginger-garlic paste. Once the raw smell of the ginger-garlic paste diminishes, add chopped tomatoes, mushrooms, curd, chilli powder, coriander powder, and biryani masala. Stir to combine and let cook for a few minutes.
  3. Add mint leaves, coriander leaves, sautéed rice, 2 cups of hot water, salt needed, lemon juice, and pressure cook for 3 whistles.
  4. Enjoy hearty mushroom biriyani.
