Ingredients

oz. mandarin oranges, drained: 22

cup almonds, sliced: 1/2

cup extra-virgin olive oil: 1/2

head romaine lettuce, rinsed, dried, and fine chopped: 1

tbsp white sugar: 3

small onion, fine chopped: 1

green onions, thinly sliced: 6

cup red wine vinegar: 1/4

tsp red pepper flakes, crushed: 1/8

tbsp fresh parsley, minced: 1

bunch red leaf lettuce, shredded: 1

tsp salt: 1/2

tsp ground black pepper: 1/8

How To Make Mandarin Almond Salad

  • Add romaine lettuce, green onions, mandarin oranges, and salt in a large bowl and mix well.
  • Heat a medium-sized saucepan on the stove and add 2 tablespoons of sugar and almonds in the saucepan.
  • Cook and stir till the white sugar melts and the almonds are coated. Stir and cook until almonds turn light brown.
  • Transfer almonds to a plate and let it cool for 10 minutes.
  • To a jar with a lid, combine olive oil, red wine vinegar, red pepper flakes, one tablespoon sugar, and ground black pepper.
  • Shake the jar vigorously until sugar dissolves.
  • Toss lettuce with salad dressing until properly coated.
  • Transfer it to a serving bowl. Sprinkle sugared almonds and serve!

Trivia

  • Almonds trees don’t bear fruits during the initial 4 years of planting.
  • Almonds can be refrigerated for 2 years and have a long storage life.
