Easy Arugula Salad

Contrary to popular belief that salads are boring, this arugula salad is delicious, looks great and packed with flavors. The delightful salad is balanced with the tartness from vinegar ad tomatoes, richness from the cheese and the subtle saltiness from crunchy walnuts. Avocados make the salad creamier while the pepper and oregano bringing in that jazz a salad requires.

This salad makes a great meal when you are on a plant-based diet. If you are having a grilled meat or fish, this arugula salad complements as a great side.

Ingredients

head baby lettuces: 1

bowl baby arugula: 1

avocado: 1

dozen cherry tomatoes, halved: 2

cup walnuts (peeled and cleaned Out): 1

large cup figs (cut into small pieces): 1

cup Balsamic vinegar: 2

cup extra virgin olive oil: 1

tbsp Greek oregano: 2

tbsp Greek honey: 2

greek Feta cheese slab: 1

salt – to taste

freshly ground black pepper

How To Make Easy Arugula Salad

  • To a large bowl, add a few handfuls of baby lettuces.
  • Add baby arugula, fig, cherry tomatoes, walnuts, salt and pepper to the bowl.
  • Slice the avocado in small strips and keep it aside.
  • To a large bowl, add balsamic vinegar, extra virgin olive oil, Greek oregano and Greek honey.
  • Whisk up all the ingredients to make sure they are completely emulsified and set aside.
  • Pour the dressing over the greens when you are ready to serve and toss well.
  • Grate the slab of Greek feta cheese on top of the salad as garnish.
  • Serve with sliced avocados.
