Ingredients

cups water: 2

Cups wheat flour: 4

tablespoon ghee or olive oil: 2

salt to taste

large eggs, lightly beaten: 4

medium onions, fine chopped: 2

medium green chilies, fine chopped: 4

teaspoon crushed garlic: 1

teaspoon crushed ginger: 1

tablespoon red chili powder: 1

tablespoon coriander leaves, fine chopped: 2

tablespoon turmeric powder: 1/2

teaspoon pepper powder: 1/2

Salt for seasoning

How To Make Madras Egg Paratha

Prepare Dough

  1. In a large bowl, combine wheat flour, a pinch of salt, and ghee or oil. Gradually add water and knead into a soft dough.
  2. Cover the dough with a lid and let rest for 10 minutes.

Prepare Stuffing

  1. Mix onion, coriander leaves, red chili powder, turmeric powder, green chilies, ginger, and garlic in a bowl.
  2. Add eggs and beat the mixture
  3. Add salt as per your taste.

Make Paratha

  1. Take a small portion of dough and make a round ball.
  2. Keep it on a smooth surface and roll it into a square shape with the help of a rolling pin.
  3. Dust it with wheat flour to prevent sticking.
  4. Meanwhile, heat a tava on moderate - high flame.
  5. Place a raw paratha on tava and cook it for a few seconds.
  6. Spread egg mixture over the paratha and fold it from one side.
  7. Apply oil on both sides of paratha and cook it well.
  8. Remove it from tava once it’s properly cooked from the inside.
  9. Cut it into halves or quarters.
  10. Serve with an accompaniment of your choice and enjoy!

Trivia

  • The thicker the egg shell, the more will be the age of the laying hen.
  • The color of eggshell doesn’t depict its nutritional value.
  • You can identify the exact age of an egg by dipping it in a glass of water. If it floats, it’s older and may not be safe to eat.
