This is one chicken recipe that makes it to the menu in most restaurants. Because it is prepared in a kadai or karahi, a type of deep, thick, and circular cooking pot that is very similar to a wok, the recipe is called kadai chicken.

All you need is a handful of Indian spices, tomatoes, onions and some chicken to make this flavorful chicken. This chicken recipe wondrously highlights the strength of cooking in a kadai; but if you don’t have one, you can make due with a reasonable large pot.

Ingredients

chicken - with bones or boneless: 400 g

capsicums – cubed: 3/4 cup

onions – cubed: 1/2 cup

ripe tomatoes – chopped and pureed: 1 cup

oil: 1 1/2 tbsp

cumin: 1/2 tsp

chopped onion: 1/2 cup

ginger garlic paste: 1 tsp

garam masala powder mixed with ¼ tsp red chili powder: 1 tsp

garam masala powder: 1/8 tsp

Kashmiri red chilli powder: 1/2 tsp

cashew nuts: 10

a few coriander leaves – finely chopped

Soak cashews in warm water for 10 minutes and make a fine paste.

How to make Kadai Chicken

  1. Heat oil in a kadai.
  2. Cook capsicum and cubed onion for 2 minutes, until they produce an aroma and set them aside.

  1. To the oil in the kadai, add cumin and cook for a minute or till it begins to splutter.

  1. Add onions and cook till they turn golden.

  1. Add ginger-garlic paste and cook till the raw smell disappears.

  1. Add chicken and saute well. Cover and cook for two minutes.

  1. Add garam masala and red chili powder.

  1. Mix and cook well for just two minutes.
  2. Pour in the tomato puree and add salt per your taste.

  1. Mix well and cook till the raw smell of the tomatoes disappear and the gravy thickens.

  1. Add sautéed onions and capsicums to the gravy.

  1. Mix well and continue to cook for 2 to 3 minutes.
  2. Add cashew paste and stir well.

  1. Cook till the gravy thickens to desired consistency.
  2. Sprinkle garam masala and coriander leaves.
