Ingredients

elbow pasta--parboiled: 140 g

onions—chopped: 2

butter beans can butter beans--drained: 300 g

chopped tomatoes: 350 gm

carrots—chopped: 2

courgettes--chopped: 3

sticks celery--chopped: 4

crushed garlic cloves: 4

vegetable stock: 1/2 L

tomato puree: 2 tbsp

parmesan cheese: 100 g

tbsp olive oil: 1

tbsp sugar: 2

bay leaves: 2

a handful of finely-chopped basil

How To Make Italian Vegetable Soup

  1. Heat oil in a pan and sauteonion, garlic, carrots and celery until the onions turn tranlucent.
  2. Add sugar, tomato purée, basil and courgettes and cook for 4-5 mins on a medium heat.
  3. Add beans, chopped tomatoes, and stock. When the mixture starts boiling, turn the heat to low and simmer for 20 mins.
  4. Add half the parmesan and continue to simmer for a minute. Add some water if required.
  5. Add pasta and cook for another few minutes until the pasta turns al dente.
  6. Garnish with basil and remaining parmesan and enjoy!
