Hawaiian Haystack

This is a recipe that you can construct and build on your own, hence the name haystack. Hawaiian haystack is also referred to as chicken sundae and is considered to be a convenience cuisine dish. It is enjoyed both as a lunchbox meal and as a family dinner.

Ingredients

olive oil: 1 tbsp

boneless chicken breast: 4

chicken broth: 1/2 cup

cream of mushroom soup: 1 can

dried basil: 1 tsp

dried parsley: 1 tsp

cooked rice: 4 cup

chopped pineapple: 1 cup

green bell pepper: 1 cup

cheddar cheese: 1 cup

fresh tomatoes: 1 cup

chow mien noodles: 1 cup

green onions: 1/2 cup

coconut: 1/2 cup

How To Make Hawaiian Haystack

  • Take a skillet and heat olive oil in it over medium heat. Add chicken to it and let it cook in the oil while you keep stirring it. Cook for about 5 to 7 minutes or until when the chicken is no longer pink in the center.
  • Add chicken broth to the skillet and simmer it for a few minutes until it is reduced slightly. It would take about 5 minutes.
  • Now add chopped basil and parsley, cream of mushroom soup into the chicken and whisk everything together until smooth. Then cook it for 5 minutes until it is warm enough and then pour this chicken sauce in a small bowl.
  • On the serving platter spread cooked rice evenly and then top it with this chicken sauce.
  • Layer it with pineapple, tomatoes, green onions, shredded coconut, green bell pepper, cheese, and chow mien noodles on top.
