Golpapdi

Golpapdi, also known as gur papdi, or gol papdi, is another traditional Indian sweet that is normally consumed during winter. It is a relatively simple dish to create as it only has three primary ingredients: ghee, jaggery, and wheat flour. All other ingredients used in the preparation of golpapdi are able to change according to your tastes and preferences. This dessert only takes 15 minutes to actually make, so you can easily have it every day if that suits your palette.

Health Benefits

Golpapdi would not be considered very healthy under normal circumstances. It is considered a sweet after all. But unlike most sweets that you buy in stores, golpapdi is made with whole wheat flour instead of processed flour. Including whole grain wheat in your diet not only provides your body with lots of essential nutrients, but it also lowers your risk of developing heart disease, stroke, obesity and type 2 diabetes.

Ingredients

wheat flour: ½ cup

ghee / clarified butter: ¼ cup

jaggery – powdered: 1/3 cup

cardamom powder: ¼ tsp

sliced almonds: 1 tbsp

How To Make Golpapdi

  1. Grease a small pan with ghee and keep it at the ready
  2. Measure the ghee in a pan.
    1. Heat it at a medium heat.
  3. Add the measure wheat flour and cook it over a low flame.
  4. Keep frying the flour until it releases a nice aroma and the flour turns color to a slightly darker shade.
  5. Add the cardamom powder and mix thoroughly.
  6. Turn off the flame and remove the pan to a counter top.
  7. Add the measured jaggery and mix thoroughly to combine.

Note: The jaggery will melt and combine well with just the heat remaining in the pan.

  1. Pour the mixture immediately on to the greased pan and sprinkle the chopped almonds over the mixture
  2. Press the mixture down using a spatula to even things out.
  3. Let the golpapdi cool down a bit before turning them into slices.
    1. Slice them while they are still a little warm.

Note: They will crumble if completely let to cool down.

  1. Let it cool completely and then store in an air tight container.
