Dhoodh Paak, also known as dhoodhpaak, is an Indian sweet that is extremely popular. It is most accurate to consider it a variation of rice pudding that is produced used milk, saffron, rice, and nuts. The entire sweet is served with puri, which is an unleavened deep-fried bread that also originates from the Indian subcontinent. Dhoodh paak is not just delicious, it is also one of the more interesting things to cook, as you have to slow boil the milk to produce it.

Ingredients

milk: 4-5 cup

basmati rice – soaked : 3 ½ tbsp

desi ghee : ½ tbsp

green cardamom powder: ½ tsp

sugar : 7 tbsp

charoli/chironji : 1 tsp

pistachios slivered: 8-10

almonds slivered : 8-10

How To Make Dhoodh Paak

  1. Heat ghee in a nonstick pan.
  2. Bring milk to boil in a deep nonstick pan.
    1. Let simmer for 10-12 minutes while stirring occasionally.
  3. Add rice to the ghee and sauté till it turns light brown.
    1. Add the milk and stir.
    2. Simmer at a low temperature for 20-25 minutes.
  4. Add cardamom powder, thoroughly stir, and cook till rice is done.
  5. Add sugar and mix well.
  6. Add charoli and mix and cook for another 10-12 mins.
  7. Garnish with pistachio and almond slivers.
  8. Serve warm or chilled.
