Gobi kheer a type of cauliflower pudding famous in Northern parts of India. A sweet pudding made of cauliflower may sound like an unappetizing dish at first. But, it is in fact a delicious dessert. Ingredients

milk: 1 L

cauliflower: 1

cup sugar: 1

tsp ghee: 1

g cashew nuts: 25

g almonds: 25

g raisins: 25

cardamoms: 3-4

How To Make Gobi Kheer

  1. Bring a pot of water to boil. Chop cauliflower into large chunks and soak in hot water for 20 minutes.
  2. Drain and rinse cauliflower florets and grate them.
  3. Boil grated cauliflower and drain. Repeat the step at least 5-6 times or until it loses its smell.
  4. Boil milk and simmer until it’sreduced to half of its original volume.
  5. Add cooked cauliflower and continue to boil for for 5-7 minutes.
  6. Add sugar and simmer for 5 minutes.
  7. Heat ghee and roast dry fruits until turn golden brown. Transfer to the kheer.
  8. Garnish with cardamom and refrigerate for 2 hours prior to serving. 
  9. Serve chilled in an insulated tumbler

In the late 1990s Chinese cauliflower imports caused to France caused French farmers to riot.
