Garlic Paya

This garlic paya is not only the perfect solution to your vampire problems, it is also a great health remedy, and generally tasty dish. Like its name suggests, this recipe calls for a sizeable quantity of garlic, so you may want to keep a toothbrush handy. The garlic however, does pair very well with the chilli ingredients used in most payas. Like a lot of garlic dishes, it tastes great when served in the winter, but it is equally delicious for any season, so try making it today.

Ingredients

lamb trotters: 10-12

medium onions: 4

cloves garlic: 10

tsp turmeric powder: 1/2

cloves: 6-8

green cardamoms: 4

cinnamon: 2

salt to taste

cup ghee: 1/2

tsp red chilli powder: 1/2

tsp black pepper powder: 1/2

medium bunch fresh coriander leaves – chopped: 1

tsp garam masala powder

tbsp lemon juice: 1

How To Make Garlic Paya

  1. Wash payas thoroughly.
  2. Cut two onions into quarters.
    1. Slice the remaining into fine pieces.
  3. Make a paste of the quartered onions and garlic.
  4. In a large pot add fifteen cups of water and paya.
    1. Add onion paste, turmeric powder, cloves, green cardamoms, cinnamon and salt.
    2. Cook for four hours on low heat.
    3. Boil till the payas are tender.

Note: Add another 2-3 cups of water if needed.

  1. Heat ghee in a pan and fry sliced onions till golden brown.
    1. Add red chilli powder and pepper powder.
    2. Add to payas and cook for five minutes.
  2. Strain the liquid and separate the payas from the residue.
    1. Heat the strained liquid with coriander leaves, garam masala powder and the payas.
    2. Remove from heat when the ghee appears on top.
  3. Add lemon juice.
  4. Serve and enjoy!

Trivia

Garlic does not actually harm vampires.
