Ingredients

3 -4 large eggs

1⁄8 tsp baking powder

2 tbsp whipping cream

salt and pepper

2 tbsp butter

1⁄4 cup Monterey jack cheese – shredded

1 green onion – finely chopped

How To Make Fluffy Omelet

  1. Whisk together green onions, cream, eggs, baking powder, salt and pepper in a small bowl until frothy.
  2. Heat an 8-inch skillet at a medium temperature.
  3. Add in butter and swirl it to evenly coat the bottom of the pan.
  4. Pour the whisked eggs into the skillet.
    1. Let set slightly.
  5. Push the eggs from the edge towards the center.
    1. Tilt the pan to let egg fill the spaces.
    2. Repeat until the omelet is set.
  6. Sprinkle the cheese down the center of the omelet.
  7. Fold the omelet over the cheese gently.
  8. Tilt the skillet and slide the omelet onto a serving plate.

The world record for omelet making is 427 two-egg omelets in 30 minutes.
