Egg Salad

One of the easiest meals you can make for yourself is the simple but delightful egg salad. It is essentially a mixture of chopped eggs and mayonnaise. You can spice it up however you want using a variety of different spices, vegetables, and herbs. And you can eat it all by itself as a side dish or an entrée. You can also really take it up a notch and transform it from a simple egg salad into a mighty egg salad sandwich.

There is something to be said for the simplicity of egg salad. It has so few ingredients that it’s easy to say why it’s healthy or not healthy. Since its eponymous and most defining ingredient is eggs, it is easy to say that this meal is in fact healthy. Eggs just have so much going on. They boost your metabolism, lower your bad “LDL” cholesterol, ward off heart disease, and keep your body fully energized.

Ingredients

eggs: 6

cup mayonnaise: 1/4

tsp Dijon mustard: 1

tsp prepared yellow mustard: 1/2

lemon – juiced: 1/2

cup green onions – chopped: 1/4

salt and pepper to taste

How To Make Egg Salad

  • Place egg in a saucepan and cover it with cold water.
  • Bring water to a boil then remove from the heat immediately.
    • Cover
    • Let eggs stand in hot water for 10-12 minutes.
  • Remove from hot water and let cool.
  • Peel the eggs.
    • Note: Place the eggs in an ice bath before peeling for faster cooling.
  • Stir together the green onions, lemon juice, mayonnaise, Dijon mustard, and yellow mustard in a medium bowl.
  • Chop the eggs into big chunks and gently mix with the dressing.
  • Season with salt and pepper.
