Corn flour: 1 tbsp
Chicken stock: 1/2 cup
refined flour: 1 tbsp
Chicken stock as required
medium yellow bell pepper: 1/2
medium red bell pepper: 1/2
medium tomatoes: 2
chopped ginger: 1 tsp
green chillies, chopped: 1-2
Chopped garlic: 1 tbsp
spring onion bulbs – chopped: 1/2 cup
tomato ketchup: 1 cup
soy sauce: 1 tsp
vinegar: 1 tsp
cup spring onion greens – chopped: 1/2
How To Make Dragon Chicken
- Thinly slice chicken breasts and place into a bowl.
- Add salt, ½ tsp chilli powder, 1 tsp garam masala powder, crushed peppercorns, and ginger-garlic paste then mix well.
- Set aside to marinate for 30 minutes.
- Heat oil in a pan.
- Add cornstarch and refined flour and some chicken stock to the chicken and mix well.
- Deep-fry chicken in hot oil till golden and crisp.
- Drain on absorbent paper.
- Cut bell peppers into triangles.
- Deseed and cut tomatoes into triangles.
- Heat 1 tbsp oil in a non-stick pan to prepare sauce.
- Add ginger and sauté for 30 seconds.
- Add green chillies then mix and sauté for 10-15 seconds.
- Add garlic then mix and sauté till golden.
- Add spring onion bulbs then toss and sauté till golden.
- Add tomato and bell pepper triangles and toss.
- Add remaining chilli powder, crushed peppercorns,and remaining garam masala powder then toss.
- Serve and enjoy!
