Ingredients

cup cashew nuts fried: 1/2

boneless chicken breasts: 3

tsp red chilli powder: 1

salt to taste

garam masala powder: 1 1/2

Crushed black peppercorns to taste

ginger-garlic paste: 1 tbsp

oil: 1 tbsp

Corn flour: 1 tbsp

Chicken stock: 1/2 cup

refined flour: 1 tbsp

Chicken stock as required

medium yellow bell pepper: 1/2

medium red bell pepper: 1/2

medium tomatoes: 2

chopped ginger: 1 tsp

green chillies, chopped: 1-2

Chopped garlic: 1 tbsp

spring onion bulbs – chopped: 1/2 cup

tomato ketchup: 1 cup

soy sauce: 1 tsp

vinegar: 1 tsp

cup spring onion greens – chopped: 1/2

How To Make Dragon Chicken

  1. Thinly slice chicken breasts and place into a bowl.
    1. Add salt, ½ tsp chilli powder, 1 tsp garam masala powder, crushed peppercorns, and ginger-garlic paste then mix well.
    2. Set aside to marinate for 30 minutes.
  2. Heat oil in a pan.
    1. Add cornstarch and refined flour and some chicken stock to the chicken and mix well.
    2. Deep-fry chicken in hot oil till golden and crisp.
    3. Drain on absorbent paper.
  3. Cut bell peppers into triangles.
  4. Deseed and cut tomatoes into triangles.
  5. Heat 1 tbsp oil in a non-stick pan to prepare sauce.
    1. Add ginger and sauté for 30 seconds.
    2. Add green chillies then mix and sauté for 10-15 seconds.
    3. Add garlic then mix and sauté till golden.
    4. Add spring onion bulbs then toss and sauté till golden.
  6. Add tomato and bell pepper triangles and toss.
  7. Add remaining chilli powder, crushed peppercorns,and remaining garam masala powder then toss.
  8. Serve and enjoy!
