Creamy Garlic Pesto Shrimp

Ingredients

olive oil: 1 tbsp

pounds of shrimp properly skinned: 1-5

salt and pepper

garlic cloves, minced: 3-4

sliced mushrooms: 1 cup

cherry tomatoes sliced in half: 1/2 cup

pesto: 1/3 cup

half & half or heavy cream: 1/2 cup

parmesan cheese: 1/4 cup

pasta cooked: 8 oz

How To Make Creamy Garlic Pesto Shrimp

  1. Make sure you heat the oil in a large skillet.
  2. Add the shrimp first and let it cook for 1 minute.
  3. Throw in the mushrooms, tomatoes and the garlic.
  4. Properly stir these for 1-3 minutes.
  5. Keep cooking and stirring till the shrimp are pink.
  6. Add the pesto and the cheese.
  7. Let the pan simmer for 3-5 minutes so the sauce can thicken.
