Ingredients

boneless chicken breasts, pounded: 5

salt: 2 tbsp

Freshly ground black pepper

cups of flour, seasoned with black pepper and salt: 2

large beaten eggs, seasoned with black pepper and salt: 3

cups of bread crumbs: 2

cup of vegetable oil: 1

grated parmesan: 1/2 cup

basil or parsley leaves

olive oil: 2 tbsp

large onion: 1

garlic cloves, smashed and mixed with salt to make a paste: 4

cans of tomatoes: 2

crushed tomatoes: 1 can

small can of tomato paste: 1

bay leaf: 1

small parsley: 1

Chile pepper: 1

How To Make Chicken parmigiana

  • Preheat the oven to 350 degrees
  • Mix the chicken with salt and pepper
  • Dredge the chicken breasts with flour
  • Dip in egg
  • Spread oil on 2 large pans and heat over high heat until smoking
  • Add chicken breasts to each pan and cook until golden brown
  • Transfer to baking sheet and top with tomato sauce
  • Add slices of mozzarella, 1tbsp of parmesan and salt
  • Bake the chicken in the oven
  • For the tomato, heat the olive oil in a saucepan over medium heat.
  • Add onion, garlic and cook until it appears soft
  • Add tomato puree, crushed tomatoes, bay leaf, Chile pepper and stir them
  • Bring the mixture to a boil
  • Season the sauce to taste
  • Cook until the sauce is thickened
