Chicken marsala

Chicken Marsala is a sophisticated dish for a special occasion or family meal.Its main ingredients are boneless breasts of chicken, Marsala wine, and some basil.

You can use the dry Marsala wine as well as the sweet Marsala in making the dish. For extra flavor and color, you can add chopped fresh Italian parsley or a few sliced green onions to the dish just before serving.

The chicken can be served with green vegetables or a tossed salad and hot cooked thin spaghetti or angel hair pasta.

Ingredients

boneless skinless chicken breast halves: 4-5 oz

all-purpose flour: 1/4 cup

salt: 1/2 tsp

Freshly ground black pepper: 1/4 tsp

dried leaf basil: 1/2 tsp

Butter: 2 tbsp

olive oil: 2 tbsp

fresh mushrooms, sliced: 4 - 8

Marsala wine: 1/2 tsp

How To Make Chicken Marsala

Gently pound each chicken breast between two sheets of plastic wrap sheets until 1/4-inch thickness. Or, slice each chicken breast horizontally to get two cutlets.

  1. Mixflour, salt, pepper, and basil in a wide, shallow dish.
  2. Coat the chicken on both sides in the flour mixture.
  3. Heat the butter and oil in a heavy non-stick frying pan on medium heat.
  4. Place the chicken in the frying pan and cook for about 2 to 3 minutes until lightly browned on the first side.
  5. Turn the chicken and add the mushrooms around the pieces of chicken. Cook for about 3 minutes until chicken is lightly browned. Stir the mushrooms.
  6. Pour Marsala wine into the pan. Reduce the heat to medium-low. Cover the pan and simmer for 10 minutes.
  7. Serve the Chicken Marsala with rice, mashed potatoes or cooked pasta. The meal pairs well with Chardonnay.
