Ingredients

desiccated coconut: 5 tbsp

cashews: 13

roasted chana dal: 1/2 tbsp

Poppy seeds: 3 tbsp

garlic cloves: 2

Coriander seeds: 1/4 tbsp

fennel seeds: 1 tsp

cumin seeds: 1/2 tsp

cloves: 2

green cardamoms: 2

peppercorns: 5

kapok bud: 1

green chili: 1

chopped ginger: 3/4 tsp

water: 1/2 cup

medium-sized cauliflower: 1

diced potato: 1 cup

green peas: 1/2 cup

French beans: 1/4 chopped carrots

finely-chopped: 1/3 cup

sliced tomatoes: 3/4 cup

curry leaves: 5

chili powder: 1/4 tsp

yoghurt: 3 tbsp

coriander leaves for garnishing

How To Make Veg Kurma

Preparing paste for Veg Kurma:

Soak 12 cashew nuts in hot water for 30 minutes.
Soak 2 cups of cauliflower florets in hot water to get rid of insects.
Rinse the rest of the vegetables then chop them in bite-size.
Mix the ingredients then grind them to form a fine paste
How to Make Veg Kurma:

Heat 2 tsp. oil in a pan. Add onions, fry until they turn golden brown.
Add tomatoes, turmeric powder, and some red chili. Stir for about 2 minutes.
Add the veg paste then mix it well on a low flame.
Add 3 tbsp. of yogurt and continue to stir.
Add chopped mix of veggies then stir for another 2 minutes
Add 2 cups water then stir again.
Add salt as per taste.
Cook for additional 10 minutes.
TIP: The gravy should be consistent neither thick nor thin.

Add a few leaves of coriander leaves then stir for one last time. Now, your Veg Kurma is ready to be served with rice or chapattis.
