Tofu Lasagna

Here is a vegetarian twist to this classic Italian classic. If you are steering clear of meaty dishes yet still crave something cheesy and pasta based then why not make tofu lasagna? It is a healthy vegan option and is sure to be one of your favorites.

Ingredients

box of lasagna noodles (boiled and drained al dente): 16 oz

tofu (drained and rinsed): 12 oz

cups grated mozzarella cheese: 3

cups Ricotta cheese: 3

jars of pasta sauce: 2

tbsp fresh parsley – chopped: 3

Salt and pepper to taste

How To Make Tofu Lasagna

  1. Preheat oven to 175 degrees C.
  2. In a large bowl, combine tofu with 2 cups of mozzarella and ricotta cheese.
  3. Fold in all the ingredients together, mix well and set aside.
  4. In a 9 x 13 inch pan, ass in a layer of pasta sauce (preferably with mushrooms) evenly.
  5. Add a layer of lasagna noodles and cover the entire layer.
  6. Spoon in a layer of the tofu and cheese filling.
  7. Repeat this layering process until the dish is full.
  8. Sprinkle with the remaining mozzarella and ricotta cheese.
  9. Garnish it with fresh parsley.
  10. Bake in the oven for 45 minutes, until the top gets slightly brown.
  11. Let it stand for 10 extra minutes.
  12. Serve and enjoy!
