Ingredients

sweet potato (or 2 small) : 1 medium

tuna: 1 tin

curry paste: ½ tbsp

tomato puree: ½ tbsp

mayonnaise: 1 tbsp

Feta cheese

Lamb’s lettuce or spinach to serve

How To Make Sweet Potatoes With Curried Tuna And Feta

  1. Set the grill temperature to a medium-high heat.
  2. Scrub and dry the sweet potato.
    1. Stab with a fork and place in the microwave.
    2. Microwave on high for 2 minutes.
    3. Turnover the potato and repeat until it becomes soft and is cooked through.
  3. Drain the tuna and place it in a bowl with the mayonnaise, curry paste, and tomato puree mayonnaise while the potato is cooking in the microwave.
    1. Mix well.
  4. Place the potato on a small baking tray once it’s cooked.
    1. Slice in half and spread on the tuna.
    2. Crumble on some feta cheese and place on the grill until lightly browned.
  5. Serve with lamb’s lettuce, spinach, rocket etc...
