Sooji Halwa is popularly known as Rava Sheera in western parts of India and Rava Kesari in southern part of India. This quick, easy and most delightful halwa is prepared in almost every home. The method to prepare this Sooji Halwa is more or less similar in every part of the country. The key ingredient is semolina (rava/sooji) and milk or water depending on the region.

Sooji is good for loss of weight and is beneficial for diabetic patients as it has the low glycemic index. It provides energy and is high in carbohydrates. Sooji is rich in calcium and zinc andis good for bone health.

Ingredients

cup ghee: 1/2

cup semolina (rava/sooji): 1

cup sugar: 1

cups water: 4

tsp ground cardamom: 1/4

tbsp finely chopped almonds: 1

How To Make Sooji Halwa

  1. In a heavy bottomed saucepan, heat the ghee. Add sooji and cook on low flame, stirring it frequently.
  2. At the same time, dissolve the sugar in water in another pan on low flame. Keep it simmeringuntil required.It is best to use a pan with long handle as you can conveniently pour the sugar solution into sooji mixture.
  3. When sooji turns light brown, it gets a glossy lookand does not stick together. Add the sugar solution and cardamom. Bring it to boil then simmer till the liquid gets absorbed. At this stage, stir the mixture occasionally.
  4. Serve the halwa hot, garnished with almonds.

Trivia:

Halwa originated in Arabia and was first prepared in the 7th century. There are many variations that are made with different ingredients such as carrot, wheat flour, sooji, etc.
