Some prefer having a bowl of soup before the meals. Smooth cauliflower soup is among the favorite soups. There are two types of soups, thick and clear, which is furthermore classified but there is no need to get deeper into it. Clear soups are yummy too! But most people prefer the soup when all the ingredients are perfectly blended and smooth. Absolutely like a smoothie, creamy, rich and delicious! Try this recipe on a cold winter night or a warm summer evening, it won’t disappoint you!

Ingredients

1 tbsp butter

1 clove garlic - crushed

1/4 tsp ground nutmeg

1/4 tsp freshly ground black pepper

1 1/2 tsp salt

6 cups water

1 head cauliflower - chopped

1 large carrot - cubed

1/3 cup green onion - chopped

1/4 cup fresh parsley - chopped

How To Make Smooth Cauliflower Soup

  • To a large pot, add butter, let it melt over medium heat.
  • Cook garlic in the melted butter 30 seconds. Add and stir nutmeg, pepper, and
  • Let it cook for 30 seconds more.
  • Pour water and add the cauliflower.
  • Bring to boil. Then reduce heat, cover and cook for 20 minutes until cauliflower becomes tender.
  • In a small saucepan, cook carrot with water over medium heat and cover until just tender. Drain and keep it aside.
  • Puree cauliflower soup in a blender or food processor.
  • Mix in carrots, green onion, and parsley which was previously set aside. Serve.

TIP:  Because different sizes of cauliflower are out there, add water if soup comes out too thick. The thickness of the soup is determined by the proportions of cauliflower to water.
