Sicilian meat roll

The Sicilian meat roll has Italian overtones to it, because the meat loaf is stuffed with mozzarella cheese, prosciutto and Italian herbs. It just melts in your mouth and the addition of the ham adds a terrific flavor. You can add your favorite vegetables to the list of ingredients to add your own tastes to the Sicilian meat roll. The best part is that it is incredibly easy to prepare and can feed the entire family.

Ingredients

cup of bread crumbs: 3/4

Large eggs: 2

cup of tomato juice: 1/2

tbsp of minced fresh parsley: 2

minced garlic cloves: 2

Dried oregano: 3/4 tbsp

salt: 1/4 tbsp

pepper: 1/4 tbsp

inch thin slices of fully cooked ham: 10

pounds of ground beef: 3

cup of shredded mozzarella cheese: 1 1/2

How To Make Sicilian meat roll

  • Combine the bread crumbs, eggs, tomato juice, oregano, salt and pepper in a large bowl. Spread beef over the mixture and mix it well.
  • On pieces of heavy duty foil, spread meat mixture into a 12x10 inch rectangle. Place the ham and shredded cheese on the loaf within ½ inch of the edges. Roll them up, beginning with the short end, peeling the foil away while rolling it.
  • Grease a baking pan and place the rolls. Bake uncovered at 350 F for about 1 hour or until the meat is no longer pink. Top this with sliced cheese, and bake for 5 minutes longer.
