Ingredients

package rigatoni pasta: 1

vegetable oil: 1 tbsp

onion (sliced): 1

cloves garlic – crushed: 3

small zucchini – sliced: 1

small yellow squash – sliced: 1

green bell pepper – sliced: 1

package fresh mushrooms – sliced: 1

can crushed tomatoes: 1

Dried oregano: 1 tsp

dried basil: 1 tsp

red pepper flakes: 1/2 tsp

tsp salt: 1/4

ground black pepper: 1/4 tsp

shrimp – peeled and deveined: 2 lb

How To Make Shrimp Primavera

  1. Boil a large pot of lightly salted water.
  2. Cook rigatoni in the boiling water.
  3. Stir occasionally until the rigatoni is cooked through but firm to the bite.
  4. Heat vegetable oil in a skillet over medium heat.
  5. Cook and stir onion and garlic until onion becomes tender.
  6. Add zucchini, yellow squash, bell peppers, and mushrooms.
  7. Continue cooking and stirring until vegetables turn tender.
  8. Pour tomatoes into skillet and season with oregano, basil, red pepper flakes, salt, and black pepper.
  9. Bring to a simmer.
  10. Cook shrimp in vegetables sauce until they turn bright pink on the outside and the meat is no longer transparent in the center.
  11. Serve and enjoy!
