Sheer khurma, literally translates to “milk with dates” in Farsi. It is a vermicelli pudding prepared by for Muslim festivals. It is a popular dish throughout Afghanistan, India, Persian, and Central Asia. It’s primarily eaten at breakfast or as a celebratory dessert during major religious holidays. While it is a religiously significant dish, it’s also just delicious and worth taking the effort to enjoy it. Ingredients

cups milk( 1 cup = 250 ml): 2

tbsp ghee: 2

cup vermicelli: 1/2

cashews--chopped: 5

almonds-sliced: 8

pistachios—sliced: 10

dates—deseeded and chopped: 10

pinch green cardamom powder: 1

tbsp raisins: 1

tbsp khaskhas: 1

Sugar as required

How To Make Sheer Khurma

  1. In a pan, add 1 tbsp ghee, roast vermicelli until golden, transfer to a plate and set aside.
  2. Heat the remaining ghee and roast nuts, dry fruits, and khaskhas; blend the mixture to a coarse powder
  3. In a saucepan, boil milk and add roasted vermicelli.
  4. Let the milk continue to simmer for 5 more minutes and add the dry fruits mixture, followed by cardamom powder.
  5. Once the vermicelli completely cooks, serve and enjoy!

Trivia

The male and female flowers of the date palm grow on separate trees and have to be manually pollinated.
