Ragi Idiyappam

Ragi idiyappam is a bit of a different take on traditional idiyappam, which is normally made out of rice flour and pressed into the form of noodles. Normal idiyappam is white in color like the rice flour it is made from. This ragi version of idiyappam’s coloring is brown, reflecting the natural coloring of ragi flour. Not only does it make the dish look more interesting on your plate, but it also tastes different than traditional idiyappam. ragi flour: 1 cup

water as needed

salt to taste

oil to grease

How To Make Ragi Idiyappam

  • Roast ragi flour in a pan for 5 mins over a low flame.
    • Add salt to taste.
  • Bring the water to a boil in a large pot.
    • Add to the roasted flour little by little.
    • Mix well.
    • Bring together to form a soft dough.
  • Grease your idiyappam press with oil.
    • Shape the dough into a cylinder.
    • Fill the dough in the idiyappam press.
  • Grease the idli plate with a drop of oil.
    • Press in a circular motion to fill the plate.
    • Repeat in batches
  • Pour water in the idli steamer.
  • Serve hot with coconut chutney or sugar and enjoy!

Ragi is a gluten free whole grain, and hence perfectly fine to be included in a gluten-free diet.
