Ragi Dosa

Crispy, thin and filled with flavours, Ragi dosa is a perfect breakfast dish. Ragi dosa gets its name for the nutritious grain used as a core ingredient, which is also a staple of most cuisine in the Southern Indian states. Finger millet or ragi comes with a high nutritional profile, and is termed as superfood because of the health benefits the small yet extraordinary millet comes with. Great as an infant food, and perfect as a healthy adult food, ragi is versatile, and there are some interesting ragi recipes one can cook.

Ingredients

ragi flour: 1 cup

cup rice flour: 1/4

cup sour curd: 1/4

finely chopped onion: 1

finely chopped green chilli: 1

tbsp finely chopped coriander leaves: 1

oil

cups water: 1 1/2

salt to taste

tsp mustard seeds: 1/4

tsp cumin seeds: 1/2

curry leaves: 5-7

oil: 1 tsp

How To Make Ragi Dosa

  1. Mix ragi flour, chopped green chillies, rice flour, sour curd, water, and salt until combined thoroughly into a batter. Set aside to settle for 30 minutes.
  2. Add coriander leaves and onion and stir well.
  3. Heat oil for tempering in a small pan.
  4. Add mustard seeds and wait for them to crackle.
  5. Add cumin seeds and curry leaves, let crackle.
  6. Remove tempering from heat and pour over batter.
  7. Heat tawa over medium flame.
  8. Smear oil over the surface, stir the batter, take 1 ladle full, and pour it from a height of 2-3 inches in a circular motion from the center to the sides. Leave some empty gaps so it can cook evenly. Do not spread it.
  9. Drizzle 1 tsp of oil around the edges of the dosa and continue to cook until the surface changes to brown. This will take about 1 minute.
  10. Flip the dosa over carefully with a spatula, and let it cook for another 30-40 seconds.
  11. Turn off the heat. Fold your ragidosa and set on a serving plate.
