Ingredients

grams of prawns properly cleaned and shelled: 500

tablespoons of roughly chopped spring onions: 2

roughly chopped mango flesh: 1

gram of deseeded litchis: 500

teaspoon of chili flakes: 1

lemon for lemon juice: 1/2

tablespoon of olive oil: 1

handful of peanuts for garnishing

salt to taste

How To Make Prawn and Litchi Salad

  • Toss the chili flakes together with the lemon juice, spring onions and oil inside a bowl.
  • Use the mixture created above as a marinade for your prawns.
  • Place the prawns inside the marinade and marinate them for around 15 minutes within this mixture.
  • Prepare an inverted pan and toss the pans inside along with the mixture.
  • Heat the pan and stir fry the contents inside it for 3 minutes. The prawns should have been cooked by now.
  • Set the prawns aside while you prepare and mix the litchi and mango.
  • Add everything together, and then add some salt and peanuts for taste and an added crunch.
  • Serve immediately for best taste.
