Ingredients

Butter: 1 tbsp

medium yellow onion, chopped: 1

large potatoes, peeled and cubed: 3

cups chicken broth: 4

salt: 1/2 tsp

cup schopped broccoli: 6

cup whole milk: 3

cups shredded cheese: 3

flour: 2 tbsp

black pepper: 1 tsp

How To Make Potato And Broccoli Soup

  1. Melt the butter in large saucepan over medium heat. Add the onions and cook for 5minutes, until it is tender.
  2. Add the potatoes, chicken broth, and salt. Bring to boil. Reduce heat and simmer for 8minutes until it is tender.
  3. Puree the potatoes and broth to the level of consistency you want it to have. Return to the pan.
  4. Add the broccoli and milk and return to a boil.
  5. Reduce heat and simmer for 6 minutes until broccoli is tender.
  6. Toss the cheese with the flour. Add to the soup in batches, stirring well after each addition.
  7. Season the soup with pepper and additional salt, as needed.
