Potato Bhajji

There are so many ways to prepare potato bhajji. It is typically made with potatoes, garlic, ginger, and curry leaves. It is absolutely easy to prepare and it is nutritious. It is perfect for Sunday brunch, to be enjoyed by the family. It goes well with hot pooris and some fresh vegetable raita. Potato bhajji is a chatpata recipe which is a wonderful mixture of tasty and spicy flavors. To add more to the taste, you should consider adding red chillies that have been dry roasted. Potato Bhajji recipe tastes best when it is hot. Store it in a casserole to keep it warm for hours together.

Ingredients

pound potatoes: 1

pinch salt: 1

onions: 2

tomatoes: 1 1/2

bunch cilantro leaves: 1/2

oil: 1/2 tbsp

pinch mustard seeds: 1/2

curry leaves: 2

garlic-ginger paste: 1/2 tsp

ground turmeric: 1/2 tsp

red chilli powder: 1/2 tsp

Mango powder (optional)

How To Make Potato Bhajji

  1. Cut the potatoes into cubes and put them in a bowl. Pour some water into it and add salt. Set aside. Chop the onions, tomatoes and cilantro leaves. Set aside.
  2. Pour oil into a pan and heat it. Add the mustard seeds and allow them to splutter. Add the curry leaves and fry for some time. Add the onions and fry the onions till they are cooked. Stir in the garlic-ginger paste.
  3. Add the potatoes, turmeric, and red chilli powder. Season with salt. Cover the pan with a lid and cook on high heat until potatoes are tender, stirring occasionally. Check at intervals to make sure it does not get burned.
  4. Add mango powder, if desired, to make it tastier.
  5. Garnish with the chopped cilantro. Serve it with bread or rotis.
    Note: To reduce your cooking time, peel and slice the potatoes and soak in warm water and add some salt.
