Orzo

Orzo is a type of short cut pasta cut to resemble large grains of rice. Orzo dishes are typically fun to eat because the orzo adopts the coloring of its seasoning. Orzo prepared with saffron will be colored like saffron, and orzo prepared with black beans will be black. Orzo is vegetarian and white, yellow, and green.

Ingredients

cup orzo pasta: 3/4

tbsp extra-virgin olive oil : 1 1/2

oz fresh mushrooms – sliced : 8

tsp onion powder: 1/4

salt and pepper to taste

tbsp melted butter: 1 1/2

cup corn kernels : 1/2

cup green peas : 1/2

tbsp fresh flat leaf parsley – chopped : 2

How To Make Orzo

  • Boil a large pot of lightly salted water at high temperatures.
  • Add the orzo pasta and cook al dente then drain.
    • Note: This should take approximately 6 -7 minutes.
  • Heat the olive oil in a large skillet at a medium temperature.
    • Add the mushrooms, and season with onion powder, salt, and pepper.
    • Cook until the mushrooms have softened and secreted their liquid.
    • Note: This should be about 5 minutes.
  • Stir in the butter, corn, peas, parsley, and cooked orzo pasta.
  • Season to taste with salt and pepper.
  • Serve and enjoy!
