Orange Chicken

Chicken is a common entre around the world. It’s a great meat to work with because it has a neutral taste profile. You can alter its taste to fit your palette. A long running joke is that a lot of meat “tastes like chicken”, when in reality, a lot of chicken is made to taste like a lot of different meat. This recipe of orange chicken is basically lemon chicken with an Oriental twist.

Ingredients

chicken breasts—skinless and boneless—diced: 2

spring onions—chopped: 2

Chicken stock: ½ cup

orange juice: ½ cup

Rice wine vinegar: 1/3cup

capers - rinsed and brined: ¼ cup

Brown sugar: ¾ cup

butter- unsalted: 6 tbsp

grated orange zest: 1 tbsp

black pepper: 1 tsp

soy sauce: 1 tbsp

lemon Juice: 4 tbsp

chopped parsley: 1/3 cup

ginger-garlic paste: 1 tbsp

pepper powder: ½ tsp

salt to taste

How To Make Orange Chicken

  1. In a saucepan over medium-high heat, butter. When the butter melts completely and begins to let smoke, add springs onions and sauté till translucent. Add salt and ginger-garlic paste and continue stirring until the raw smell of garlic disappears.
  2. Stir in chicken pieces and let cook for about 3 minutes or until the chicken turns brown.
  3. Add the capers, stock, orange juice, vinegar, soy sauce, and orange zest and bring to a boil.
  4. Turn off the heat, add lemon zest and pepper, and garnish with parsley.
