If you have ever eaten at an authentic Mexican restaurant then you have probably tried Mexican rice. it is the flavorful rice that is often used as a side dish and commonly known as arroz rojo or red rice. Traditionally, it is made by sauteing rice with oil and combining it with chicken broths and tomatoes. The tomatoes are normally chopped or in the form of a sauce. Mexican rice can also be made to look yellow when it is combined with saffron in lieu of tomatoes.

tbsp vegetable oil: 3

cup diced onion: 2/3

cups white rice – uncooked : 1 1/2

cup green bell pepper – chopped : 1

tsp ground cumin: 1

tsp chili powder: 1

oz tomato sauce: 8

tsp salt: 2

clove garlic – minced: 1

tsp saffron – powdered : 1/8

cups water: 3

How To Make Mexican Rice

  • Heat vegetable oil at a medium-low temperature in a large saucepan.
  • Add the onions to the pan, and sauté until they turn a golden color.
  • Add rice to the pan.
    • Coat the grains with oil by stirring them.
  • Mix in the water, garlic, green bell pepper, cumin, chili powder, tomato sauce, salt, and saffron.
  • Cover the pan and bring it to a boil.
  • Reduce the heat to simmer.
  • Cook until the rice becomes tender.
  • Stir occasionally.
