Ingredients

teaspoons olive oil: 2

tablespoon white wine: 2

skinless, boneless chicken breast halves: 6

cloves garlic, minced: 3

cup onion, diced: 1/2

cups tomatoes, chopped: 3

cup white wine: 1/2

teaspoons fresh thyme: 2

tablespoon chopped fresh basil: 1

cup Kalamata olives: 1/2

cup fresh parsley, chopped: 1/4

Salt and pepper to taste

How To Make Mediterranean Chicken

  1. In a large skillet, pour the oil and 2 tablespoons of white vinegar and heat on medium level.
  2. Add chicken and cook both the sides for approximately 406 minutes each. Remove chicken from the skillet and put it aside.
  3. Next, cook garlic in the oil and wine mixture that’s still there in the skillet. Cook for 30 seconds and then add onion. Let it sauté for another 3 minutes after adding onion and then add tomatoes. Bring to boil after adding tomatoes.
  4. Lower down the heat level and add ½ cup of white wine and let simmer for about 10 minutes.
  5. Now add thyme and basil and let it simmer for another 5 minutes.
  6. Put chicken back into the skillet and cook for 1 minute.
  7. Sprinkle salt and pepper to taste and the delicious, finger-licking Mediterranean chicken is ready to be devoured.
