Ingredients

tbsp coconut oil: 3

garlic cloves: 2

red onion: 1

tbsp mustard seeds: 1

tsp curry powder: 1 1/2

tbsp sugar: 1

tsp cayenne pepper: 1 1/2

tbsp desiccated coconut: 2

salt to taste

cup coconut milk: 1/4

serrano pepper-sliced: 1

raw mangoes—washed and chopped: 3

tsp white vinegar: 1/4

How To Make Mango Curry

  1. In a pan over medium heat, add oil and splutter mustard seeds. Add onion, garlic and sauté until soft.
  2. Add curry powder, sugar, cayenne pepper, and salt. Stir to combine.
  3. add coconut milk, mangoes, vinegar, and serrano pepper, and salt.Add a splash of water, if needed, and cook the mixture for 20 minutes. Taste to check the seasoning. Add more salt, if require.
  4. Serve delectable mango curry with rice!
