Malpua

Malpua is yet another wonderful holiday treat. It is perfectly suited for festivals like Diwali and Holi. And here’s another plus — is it relatively easy to prepare. No wonder it is very popular in regions like Maharashtra, Orissa, West Bengal, Rajsthan, Bihar, and Utter pradesh. Each of this regions have a different recipe for making this sweet pancake. However, they all have in common the creamy richness of milk, the subtle tang that coconut lends to it, khoya, and of course a variety of tastes brought about by the addition of fruits.

Ingredients

flour: 1 1/4 cups

fennel seed, crushed: 1 tsp

ground cardamom: 1/4 tsp

thickened milk: 1/4 cup

water: 1/4 cup

oil: 1 tbsp

How To Make Malpua

Making The Batter:

  1. Mix flour, fennel seeds, and cardamom in a bowl.
  2. Add water and thickened milk to the flour mixture and stir very well. Knead the flour mixture to form small pieces of batter.
  3. Cover the bowl containing the batter and keep it aside for 10 minutes.

Making The Sugar Syrup:

  1. Boil the sugar and water in a pot until the sugar syrup becomes sticky.
  2. Reduce the heat so that the sugar syrup remains warm. 

Making The Malpua:

  1. Heat oil in a pan. Fry the small pieces of batter well until the color turns golden.
  2. Flip the batter so that other sides can be properly fried too. Drain excess oil from the fried batter and cool it down a little bit.
  3. Dip the fried batter in the sugar syrup.
  4. Garnish with pistachios, if desired. Serve at once.
