Ingredients

cups milk: 3

almonds: 20

pinches of saffron: 2

tbsp sugar – adjust to taste: 2

Few drops of rose essence

cup of hot water – for soaking: 1/2

tsp thinly sliced almonds – for garnishing

A few saffron strands – for garnishing

How To Make Kesar Badam Milk

  1. Infuse 2 pinches of saffron in hot water for 30 minutes.
  2. Blanch the almonds in hot water for 20 minutes.
  3. Peel the almond skins and blend the almonds with 2-3 tablespoons of milk until smooth.
  4. Bring milk to boil in a heavy-bottomed pan. Simmer on low heat for 10-12 minutes.
  5. Make sure to stir intermittently to avoid burning and sticking at the bottom of the pan.
  6. Add almond mixture to the milk while stirring continuously. Add saffron water, sugar, and rose essence.
  7. Simmer until milk is reduced to 3/4 the original amount.
    Garnish with sliced almonds and remaining saffron strands.
  8. Serve hot or chilled and enjoy!
