Ingredients

small spaghetti squash: 1

tablespoons of extra virgin olive oil: 2

teaspoon of sea salt: 1

teaspoon of pepper: 1

teaspoon of Italian seasoning: 1

tablespoons of extra virgin olive oil: 3

cloves of garlic, chopped finely: 2

cup of grape tomatoes: 3/4

cups of spinach: 2

cup of mozzarella cheese: 1/2

basil for garnishing

How To Make Italian Spaghetti Squash

  1. Set the oven on preheat to 400 degrees.
  2. Take the spaghetti squash and chop it into vertical halves
  3. Place the halves of the spaghetti squash on the baking sheet with parchment, and brush some oil on each of the squash.
  4. Season the squash with salt, pepper, and Italian seasoning.
  5. Position the squash on the baking sheet in a manner that the cut sides are upside down.
  6. Place the baking sheet into the oven and bake the seasoned squash for 35 minutes.
  7. Once done, pull out the sheet and flip the squash and allow them to cool.
  8. Scrape out the spaghetti from the squash using a fork.
  9. Take a large skillet and pour 3 tablespoons of extra virgin olive oil. Allow the oil to heat over low flame.
  10. Add tomatoes to the oil and sauté for ten minutes until they are soft and ready to burst.
  11. Add garlic to the skillet and combine with tomatoes. Sauté for 3 minutes before adding spinach and spaghetti squash.
  12. Toss to combine all the elements and continue cooking for 6 to 8 minutes until you see spinach welting.
  13. Once the mixture is ready, place it into the hollow squash halves using a scoop or big spoon.
  14. Top the halves with mozzarella cheese.
  15. Place the squash in the oven and bake for around 8 to 10 minutes until the cheese is melted.
  16. Remove from oven and transfer to a serving plate.
  17. Garnish with basil and parmesan.
